Fire and PB Cookies

I'm in a lazy mood today. I probably should have run this morning, but here I sit. Instead of running, I baked cookies. Kind of counter-productive, no? After I write this, I'm trying to convince myself that I'll go upstairs and pack for our trip tomorrow, jump in the shower, and maybe change the sheets on the bed. We'll see how much of that I actually accomplish.

Our hometown and the surrounding areas are getting hit really hard right now with drought, wild fires and wind. So far in 2009 our hometown has received just over 1 inch of rain. By this time last year they were over 5 inches of rain. Today, my mom had a meeting in a town about 10 minutes away. She arrived at the junior high/intermediate to find a fire across the street and the school in the process of evacuating. My mom called me practically screaming. Fires are very serious matters in those parts. She had driven by that very field an hour before and there was no fire. The junior high/intermediate and high school are in danger and by now could very well be up in flames. According to our local paper, the number of fires in that part of the state is over 80 for the year. Eighty. I'm just hoping and praying for the best. For rain and for the wind to stop blowing.

I'll leave you on a good note with the Peanut Butter Cookie recipe I made this morning.

No Flour Peanut Butter Cookies

1 C. Peanut Butter
1/4 C. White Sugar
1/2 C. Brown Sugar
1 tsp. Vanilla
1 Egg

Mix all ingredients. Form into teaspoon size balls. Use fork to flatten cookies on cookie sheet. Bake for 8 minutes.

Notes from me:
1. I rolled mine in white sugar before putting them on the cookie sheet and flattening them. I thought they were a bit too sticky before - worked for me!
2. I used a tablespoon measuring spoon to scoop the dough and then made 2 balls out of each tablespoon. So each ball was 1/2 a tablespoon...does that make it a teaspoon?
3. I baked mine on a plain ole cookie sheet lined with parchment paper - I swear by the stuff.
4. After 8 minutes they may not look done, but they are. If you make them teaspoon to 1/2 tablespoon sized, then they will be perfect after 8 minutes, trust me!

I'm still a little freaked out by my fire experience earlier. The students from the Intermediate were bussed to a church; not sure where they took the Jr High/High School kids. Keith called to say that another light pole at Shotwell was down. And the Winter's Freeway is closed between 14th and 27th due to a sign that crashed down onto the road. And, our pool cover has blown off the pool and is all bunched up near the berm! Nothing like West Texas wind! Love you, M
